I already shared my Cajun Barbeque Foil Packets from our recent camping trip.
These were on the table for dessert two nights in a row. You can use any fruit that you have, but berries are abundant in the summertime.
Ingredients
serves 6
6 cups mixed berries (I used strawberries and blueberries)
2 Tablespoons granulated sugar
3/4 cup butter, softened
1/3 cup brown sugar
2 cups rolled oats (you could use 1-1/2 cups granola and skip the oats and nuts)
1/2 cup sliced nuts
1-1/2 teaspoons ground cinnamon
Also needed: heavy duty foil, parchment paper
Procedure
Lay a piece of heavy duty foil on the table. Lay a piece of parchment on top of that. In a mixing bowl, toss the berries with the sugar. Spoon 1 cup of the berries into center of the parchment.
In the same mixing bowl, use a fork to blend together the butter, brown sugar, oats, nuts, and cinnamon to form a crumble topping. Divide the crumble evenly into the packets.
Bring the long sides of the foil together and fold down to seal. Crimp in the ends to create a foil packet. Place the packet on top of some smoldering coals or a grill over a campfire. Cook for 15 to 18 minutes (flipping halfway through) until the berries are bubbling and the oat mixture crispy and browned.
Remove the packets from the fire with tongs or oven-mittens. Open foil carefully to release the steam. Serve hot.
