In the dead of Winter, while most of the country is experiencing a frigid cold snap, I latched onto the theme for this month's Eat the World to create a bright, sunny dinner with some of the Caribbean flavors of St. Lucia. Saint Lucia is an Eastern Caribbean island nation with a pair of dramatically tapered mountains on its west coast; it has everything from volcanic beaches, coral reefs, luxury resorts, and fishing villages. It was a brief stop on the Caribbean cruise I took when I graduated from college. That was a prime example of why I dislike cruises. We were there for less than six hours...definitely not enough time to explore or even really get a feel for what it would be like to live there. Don't get me wrong, the Pitons (mountains) were stunningly dramatic as their bases plunged into the azure sea. But it left me longing for more.
