Stacy of Food Lust People Love, Sue of Palatable Pastime, Rebekah of Making Miracles, Wendy of A Day in the Life on the Farm, and I coordinate this low-stress group; we only participate when we are inspired. Sneha is hosting this week and asked us to share recipes using fresh vegetables.



I am always eating vegetables! This is a delight to share, especially since it requires absolutely no cooking! Here's the rest of the crew's offerings...



Pinzimonio


This is a simple appetizer or snack that is very popular in the Fall in Italy. It does seem silly to even post this as a recipe. But, in case you have never come across this dish, I hope this inspires you to try it. You can use any fresh vegetables you have. For this I used radicchio, endives, carrots, radishes, jicama, and green beans..


  • 1/2 cup olive oil (the best you have!)

  • salt

  • pepper

  • pinch of red chile pepper flakes



That's all there is to it. Serve with whatever veggies you like!
