This is a simple appetizer or snack that is very popular in the Fall in Italy. It does seem silly to even post this as a recipe. But, in case you have never come across this dish, I hope this inspires you to try it. You can use any fresh vegetables you have. For this I used radicchio, endives, carrots, radishes, jicama, and green beans..
1/2 cup olive oil (the best you have!)
salt
pepper
pinch of red chile pepper flakes

That's all there is to it. Serve with whatever veggies you like!
