As in years past, we post every two weeks with a recipe inspired by a certain letter. It's like Sesame Street for grown ups! And I love it, so, here we are with the letter 's'...

Squash Blossom Crêpes

I saw a photo of these on social media and knew that I had to make them for myself. They are so pretty! I simply adapted my usual crêpes and added the blossoms to the outside.

Ingredients
makes approximately one dozen
Crêpes
squash blossoms
1-1/2 cups all-purpose flour
3 eggs
2 cups organic whole milk
dash of ground cardamom
butter, for cooking
Filling
1 cup ricotta cheese
2 Tablespoons grated parmesan cheese
1 Tablespoon fresh herbs (I used organic chives)
1 Tablespoon freshly squeezed lemon juice
zest of one organic lemon
salt and pepper to taste
For Serving
olive oil
salt and pepper

Procedure
Filling
Mix all of the ingredients together in a small mixing bowl. Season to taste with salt and pepper. Set aside until ready to fill the crêpes.

Crêpes
To prepare the blossoms, trim the ends of the flower near the stem. Remove the stamen or pistil from within the blossom. Slice the flower so that they will lie flat.
Whisk all of the other ingredients together until lump-free. Let sit for at least 30 minutes. Heat a large flat-bottom pan and rub the bottom with butter. Pour the batter into the pan and quickly make a tilting motion to distribute the batter all over the pan. The goal: have as thin a batter layer as possible. Arrange a blossom on the crêpe. Cook until the crêpe is a bit stiff and flip over, cooking for another minute The pancake should be lightly browned on both sides. Repeat till all the batter is used; I made 12 crêpes with the quantities listed above.
Assembling
Place filling on half of the crêpe and fold in half, then in half again. Drizzle with olive oil and sprinkle with salt and pepper as desired.

Absolutely stunning! I've never been much of a crepe girl, but for these, I would totally make an exception. Too pretty and delicious looking to pass up!
